Another tasty way to get more soy into your diet, one bite and you won't believe it's tofu.
8 oz. White Wave reduced fat tofu, drained
1 cup nonfat soy milk
1/2 cup chopped fresh tarragon
4 cups short pasta
2 cloves garlic, mashed
2 Tbsp. olive oil
1/4 tsp. white pepper
salt to taste
In a food processor, puree tofu with soymilk and half of the tarragon. Sauté garlic in olive oil for few seconds. Add the rest of the tarragon. Sauté over low heat for one minute. Pour tofu puree over the garlic and tarragon mixture. Add the seasoning and cook over medium heat for 5 minutes. Bring salted water to a boil, drop in the pasta and cook until al-dent. Drain the pasta. Save one cup of the boiling water. Add the pasta to the tarragon sauce, stir and cook-if the sauce is dry add some of the saved water-for five minutes. Serve hot.
